12/5/24 Update – Happy Panini is Hiring! – This from their FB page, “We are looking to train the next great Panini makers. Quick learners who are comfortable working in a fast paced social environment, beats out experience.

“Shifts are 3-6 hours long, flexible hours , primarily morning and lunch shifts. Must speak, read and write English. Message us if you’re interested. Interviews happening THIS WEEK.

12/3/24 Update – We are very excited to bring you another update for Happy Panini!

The well-loved food truck turned restaurant will be opening its doors soon. They are in the permit stages right now, and they are sharing on their FB page that they plan to be open by this coming weekend!

11/13/24 Update – We’ve spoken with Chris, one of the owners of Happy Panini, and we have good news! The new permanent location downtown has a new target opening date of November 25th!

They are planning a Grand Opening soon, we’ll keep you posted!

Update 10/16/24—This past Saturday, Ken and I met Gina Auditore at the Olde Tyme Days Celebration. Gina and her husband, Chris, opened the Happy Panini Food Truck during the pandemic.

Gina was happy to give us an update about their move into the new permanent space. Here’s what she had to say:

The original opening date of October 18th has been pushed out to the end of October. The permits can take a while to come through.

They are still planning to add more salads and pasta to the menu, but they might not be available for a few weeks after they open.

Both Chris and Gina are really excited about the move, and we are excited for them!

Added 9/9/24 – We were downtown yesterday and we learned that the very popular food truck business, Happy Panini, is getting their own permanent location in downtown Hutto!

We spoke with Chris, one of the owners, and he tells us they are very excited to move into their new location! You can expect the same great food from a great staff!

They will be adding a few new features…

Happy Panini Hours will be extended to include Breakfast, Lunch and Dinner.

The new hours will be Monday thru Thursday – 8am to 9pm, Friday and Saturday – 8am to 10pm, and Sunday 8am to 6pm.

We also learned they will be expanding their menu to include more salads and some pastas.

The new location will offer diners inside and outdoor seating options and they are planning something special with the patio area between their space and the Hall of Fame.

We asked about the food truck and Chris told us they definitely plan to keep the food truck, but they aren’t clear at this time what that will look like going forward.
